Easy Homemade Granola

- 6 cups organic rolled oats (I prefer old fashioned, but quick oats will work too)
- 1 cup organic shredded coconut
- 1 cup sliced almonds
- 1 teaspoon cinnamon
- ¼ cup organic unrefined coconut oil
- ¼ butter
- ½ cup honey
- 1 teaspoon vanilla
- In a large bowl, combine the dry ingredients.
- In a small saucepan, melt the coconut oil and butter.
- Pour over the oats mixture. Add the honey and vanilla and combine everything well.
- Divide between (2) greased (with butter) 13" x 9" pans.
- Bake at 350 degrees for 10 minutes. Stir, making sure to scrape the sides (or they will burn), and return to the oven.
- Bake 5 minutes, stir, return to oven.
- Bake 5 minutes and remove from oven to cool. If you'd like your granola to be darker, increase the bake time by 5 minutes.
- Cool completely before storing.
- After baking, feel free to add dried fruits, berries, or other desired additions.
