Homesteader Casserole

I love adapting recipes to suit my needs, and in this case I was looking for a recipe in which I could use my canned venison, in addition to the potatoes I’d canned this fall and some frozen peas from the garden. This recipe {HERE} was a great starting point. My alterations resulted in a hearty, homestead-pleasing meal and I hope you enjoy it too!

Ingredients:
-1 pint jar canned venison {or substitute 1# meat of choice, browned}
-1/3 cup milk and 2 heaping spoonfuls corn starch {for thickening the liquid from the canned venison}
-2 1/2 pounds red potatoes, peeled and cubed into 1″ pieces  
{or substitute 3 pint jars canned potatoes, drained}
-2 cups frozen sweet peas
-3 cloves garlic, minced
-1/4 onion, diced
-salt, pepper, season salt, garlic powder, onion powder
-1/3 cup Worcestershire sauce
-1 can cream of mushroom soup
-1 cup milk
-2 teaspoons ground cumin
Directions:
-Cover potatoes with water and boil them until fork-tender. Drain.
-Preheat oven to 400 degrees F.
-Grease 9×13 pan and set aside.
-Pour canned venison {liquid included} into a large saucepan over medium-high heat. Add onions, garlic, salt, pepper, seasoned salt, garlic powder, and onion powder {all to taste}and simmer until onions are soft. 
{If you are substituting other meat, brown the meat with these ingredients}. 
-In a separate bowl or cup, whisk together the 1/3 cup milk and 2 heaping spoonfuls of cornstarch. Slowly add to the simmering venison until the liquid is thickened to desired consistency. Remove from heat.
-In another bowl, whisk together the Worcestershire sauce, cream of mushroom soup, milk, and cumin. Pour into venison mixture and combine.
-Gently fold in the potatoes and peas before pouring the entire mixture into your 9×13 pan.
-Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes.
-Enjoy!
